Soup is perhaps the perfect winter dinner. This sweet potato pumpkin soup is very simple to cook with a little prep time. I love making soup when during these dark and cold winter days. I don’t love cooking at all so when I must make dinner it has to be quick, easy & healthy.
Ingredients for this sweet potato pumpkin soup:
- 2 sweet potatoes
- 300 grams pumpkin
- 1 tbs curry
- ½ tbs chill powder
- 1 liter broth (vegetable)
- Salt & Pepper
How to make:
- Cut the sweet potatoes and pumpkin into small cubes
- Prepare the broth
- Add the sweet potatoes and pumpkin.
- Add all the spices.
- Let it boil for about 20 minutes.
- Puree the soup.
When the soup is ready to serve you can top it with a bit of parsley. Toast some bread and you’re ready to have dinner!
